Does anyone out there know if all ginger plants have edible rhizomes? I want to grow and sell commercially and have a variety of ginger plants but not certain if all are edible. Are any gingers poisonous?

Hi Jill, I was speaking to one of the other contributors of subTropical Gardening magazine and was told that all gingers (Zingiber species) are edible, but not all are palatable. Some taste better than others, while some are not nice at all. There are no identified texts that they are poisonous.

I cannot comment on the other genera - Costus, Hedychium, etc.

the first one that springs to mind is galangal which is a favorite of the Thais.
